Copper Pennies

Billy really loves these, I just forget to fix them very often.  It is a simple recipe and not time consuming.

Ok…so I forgot to put the carrots in the picture…sorry….but here are the other ingredients.  (Just be sure you have carrots when you get started!)

2 pounds of carrots

1 onion chopped

1 green bell pepper chopped

1 can tomato soup

3/4 cup white vinegar

3/4 cup sugar

1/2 cup vegetable oil

1 teaspoon dry mustard

Peel and slice carrots, boil until just tender.

Drain water.

Add chopped onion and bell pepper…..

Mix soup, sugar, vinegar,oil and dry mustard.  Bring to a boil.

Pour boiled mixture over carrots, onion and bell pepper.

Marinate overnight…..

I store mine in jars for easy storage, they will keep for up to four weeks in the refrigerator.  (This is not canned and has to be refrigerated)

You can serve them cold, warm or hot.

Just Peachy!

Last year was very interesting to say the least , when I tried my hand at making blackberry jelly.  It had been many, many years since I had canned anything.  Matter of fact, it was when I was a little girl.  I remember very vividly helping Mom make jelly and pickles.

I always loved helping.  Now that I think about it….I have to wonder if I REALLY was much of a helper?  I don’t know the answer to that….but she sure did make me feel as if I played a big part when we admired the finished product!

The other day I went to purchase some jar lids.  As I compared name brand versus off brand tops, I remembered times when Mom must have been out of lids herself and would use paraffin.  Funny how things like that will pop into your head after laying dormant for sooooo many years.  Gulf Wax….I can see the box in my head plain as day.

While picking out lids, I happened to pick up some pickling spices too.  I’m hoping that I will get around to that too, before the season totally ends.  There again I remember helping mom wash the cucumbers, using a recipe that required us to soak them in lime.  She would stress the importance of rinsing them really well.  Then we let them soak for a while in cool water, rinse and repeat this process several times.  Making the pickles was not a quick process, but man were they ever good!

I needed more lids because I passed a fruit stand and had to buy some peaches.  They were huge and looked delicious.

As I looked at the different kinds, a lady that worked there asked me if I was making jelly with them.  When I told her yes, she directed me to a spot that held several BIG bags of peaches.  They were ripe and ready to go.  If I was making jelly in the next day or two…. she would recommend these.  I remembered last year having to let the peaches sit for a couple of days for them to soften up a bit.  I was delighted that she shared that with me.  AND because they were already ripe….they were much cheaper.

The next day I got everything ready for a day of canning.  As I retrieved my jars I felt like I was 8 again.  Helping Mama gather the jars from the cabinets.  I was small enough to wiggle into the back of the corner cabinet ….where things would often get lost it was so deep.  Washing them in the hot soapy water….I could almost feel the wooden chair underneath my knees.  Remembering how Mom would push a chair to the sink so I could reach.  I would kneel on my knees and wash the glass jars.  Sometimes getting fascinated with the bubbles, and get lost in popping them.  Or wading that dish rag up just right so I could slip my small hand into the mouth of the jar and clean it all the way to the bottom. If I didn’t know better I would have thought I was back in the kitchen on Linde street.

Plum jelly was one that mom made a good bit.  We had access to plums from our tree in the yard and friends that had plum trees as well.  Friends that lived in the country would share their abundance of vegetables with us.  I fondly remember picking vegetables straight out of the garden.  That was work and fun all rolled into one.

I tried to remember why we quit making jelly….and pickles.  I suppose it was due to the fact that it was more convenient and economical to just buy it.  It does take a lot of sugar and time to make jelly.  I honestly don’t know how Mom had the time or energy to can anyway.  But… somehow she did…..and she let us help on top of it.  Like I said earlier, I’m not sure how much I really “helped”.  I might have even got in her way a good bit, but she never made me feel like that.

 

I proceeded to rinse and peel the peaches.  Funny how I felt much more confident this year, after venturing back into the canning world last year.

I peeled and chopped and peeled and chopped and peeled and chopped.  That was indeed a BIG bag of peaches!

The smell of those peaches were wonderful, especially once they came to a hard boil.  The aroma was heavenly.  I actually got a little brave on the last batch and added some cinnamon.  Now that……smelled good!

All in all it was very uneventful this year, thank goodness.

I will have to say the pop of the tops is music to my ears.  I absolutely LOVE hearing the jars seal.

There is a great since of satisfaction when it is all said and done.

Of course they are finished at this point….but I like to decorate the jars.  A couple of nights this week at the end of the long summer days, I cut my fabric and made my labels.

As I was finishing up the jars…..Billy said…they sure look good don’t they?

I had no idea he was even paying attention, since we both had different things we were doing.  He admired the jar as I applied the label.  I admit….it made my heart skip a beat.

The jar glistened as I held it up with the pretty peach colors shining through.  It’s that…. AH….moment.

I sure am glad Mom let me spend that time with her in the kitchen so many years ago.  It is a neat thing to be able to pass things like that along to your kids.  Although I might have forgotten some things about the process…there are some things I will never forget.   The hard work, the wonderful aromas, the laughter, the music of the lids as they seal and the smiles that came afterwards!

It isn’t just the satisfaction of “hey….I did that”.

It’s being thankful for the things God so richly blessed us with, food and family to enjoy it with.

Now, I just need to make some good ole buttered biscuits…and everything will be.… just peachy!

 

Catch up day

Today was a day of catching up on all the things that have been put on hold during the holidays.  First and foremost on my list was to clean the chicken coop.  It hasn’t been very long since I cleaned it and it hasn’t seemed to bother the girls any…..they have been laying plenty of eggs.

It is my understanding that they normally slow down in the winter time.  However, I have a friend/neighbor that remembers a wives tale from her mother.  Several other neighbors have told me the same thing…so there must be something to the tale.  It is said that if you put hot pepper in corn bread and feed it to the hens it will make them lay more eggs.

Now….I don’t know if there is any truth to this or not….but the girls sure seem to be steady.  My neighbor cooks up a batch for them every so often.  I have been collecting 3 to 4 eggs a day.  That means that I am gathering around 21 (or more) eggs a week.  Not bad….especially since I only have 6 hens.

Free range eggs are supposed to be healthier.  There is actually less cholesterol…. more vitamin D, less saturated fat, up to 2 times more omega 3…. just to name a few things.

Ironically, I am not an egg eater.  I know…I should be ashamed.  But I do like to eat things that have egg in them.  Like fried rice and stuff like that…I just don’t care for egg by itself.  I am going to work on that though.  So, I started the other day.  I cooked one of our girls eggs next to a store bought egg.  I just wanted to see the difference.

Chickens love to eat bugs and worms and all kinds of creepy crawling critters. All of that natural eating from things found in the ground are the very reason why they are better for you.  Of course in the winter the bugs are a little more scarce than they are the rest of the year.  Today, while cleaning their house I moved a bale of hay that I had sitting by the porch.  They went NUTS….they found worms and little black bugs and all kinds of things that were either under the hay and in the hay.  I had given them some chicken scratch this morning…but they ignored it and went straight to the spot where the hay had been.

I have these little critters on hand for those cold days….when I think they would like a treat.  They are mill worms….dried.

Isn’t that just crazy?  I am finding that there are a lot of things that I do that are crazy since I moved out to the land.  I often have baggies of these mill worms in my car.  And I find that I kinda like the smell of sweet feed that I take over to the cows.  I have containers of cut apples for the donkeys and ponies in the fridge most of the time…and I am constantly setting aside food scraps for the goats.  I try to make sure I label what they are for….afraid Billy might think it is something for him to munch on.  It wouldn’t take but one good bite and he would know that it wasn’t…but I would hate for that to happen.

I got tickled yesterday when Billy put on some coveralls that he wears when it is really cold out.  He had them on about a week ago and they had been in the garage until yesterday.  He reached in his pocket and pulled out an egg….we both busted out laughing.

We are really enjoying farm life.

Fall Festival

 

 

 

 

 

Making Funnel Cakes has kind of become our second job…..

We started several years ago helping with our church’s fall festival.   We have tweaked things here and there and have become pretty good at it.  The other night we helped another church with their festival.

A friend of ours is the mixer….each part of the process is important.  If the batter is too thin….NO GOOD…..If the batter is too thick…..NO GOOD.

Mr. Joe has it down to a fine art!

Then it is skillfully swirled into the special ring….Billy’s Job

Ring is then lifted while it cooks….

 

The ring goes back to the maker….while the flipper…. being Chris, watches for the perfect color of light brown to appear.

 

Once it is ready….

 

The duster….Holly….sprinkles a nice coat of powdered sugar on top.  This is usually my job…I mentored Holly and she learned quickly.

 

They turn out very nice….and are really YUMMY!

We always end up with a line at our table….I like to think that is because they are soooooo good.   But it just may be because they are free.  Oh well, whatever the case we sure have fun watching other people enjoy them.

Cake Walk….I remember winning a cake at a school carnival when I was little.  It was the neatest thing.  I don’t even remember what kind of cake it was…but I remember being the….WINNER!!!!!!

Our grand kids always LOVE these.

Trunk or treat…This is where cars open their trunk and hand out candy.  Several had neat little games you would play and then pick a treat.

 

They also had Horses….

 

I think that is so cool…when I was little my Aunt and Uncle had horses.  I was always intimidated by the size of them.   But have always admired how absolutely beautiful they are.

 

Our friend loves horses and tries to always line them up for the festival.   Kids of every age were eager to ride and pet them.

With Chris and Holly helping…I was able to sneak away for few minutes to see our grand kids…..

 

Riley was a Cheetah…and Andy was Mario.

 

They are so cute…if I say so myself.

 

Layla was a CUTE  “Groovy” girl….

Then she found the face painting booth…

So she was still groovy…but with a puppy dog face!

 

It was so nice to have all our kids and grand kids around.

 

It is great having everyone live so close.

 

Being able to enjoy every stage of their lives.

 

Including the fact that I got to pull one of Andy’s teeth the other day……  We think he lost one when he ate some Laffy Taffy…

 

It was nice having Chris and Holly help this year….but I don’t think they will help us next year…..

They will be entertaining a little one of  their own!!!!

That is right…we have a new grandbaby coming!!!!!  It is supposed to be a boy and is due to arrive in February.

We are very excited for them….and for US!

God continues to shine His beautiful light on us in more ways than one.

I think about this blessing, put to song.   Growing up, it was often sung as we left our church building.  Loved it then…LOVE IT…more and more as I get older.

May the Lord God bless you and keep you,

May the Lord make his face to shine upon you,

and be gracious to you.

May the Lord lift up his countenance upon you,

and give you peace.

S’more fun…..

Friday the temperature was perfect….almost hot actually. Just the way I really like it.  But it didn’t seem like October.  Cooler weather was supposed to be heading our way.  Sure enough… by nightfall…. things changed drastically.  The temperatures dropped and it turned downright cold.

We already had plans to have bonfire get together’s for some Middle School kids on Friday night and the High school kids on Saturday night.  The cold air certainly made it more fun.

We fixed a small fire in the fireplace at the pavilion….

And Billy gathered wood for the big bonfire.  Once it was lit…it was perfect warmth for the cold weather.  There is just something about a campfire.  It smells good and feels great.  I love to hear the noises it makes.

The kids seemed to have a blast.  Funny how gathering times like these make up some of our best memories when we are older.

We were amazed to find out how many kids had never roasted a hot dog over a campfire.  We were glad they were able to give it a try.  Between the two events we ended up with about 70 people.  Needless to say….I wasn’t able to take many pictures during the events.  I was a little BUSY.

But I did take a few pics of these crazy BIG marshmallows before hand.  They are probably 3 or 4 times the size of a regular one.

It is hard to tell here….but….

This gives you a little bit better idea of how big these things are! They are GINORMOUS!!!!! 

The kids loved them…..

This is an exchange student, one of those, who had never roasted a hot dog on an open fire or ever had a S’more….until that night.

We all had to watch as he experienced it for the first time.

Once he was able to free his mouth up from all the goo of the marshmallow….he told us he REALLY liked it!

I will have to say that the BIG Campfire Marshmallows are fun …..and worth trying.

However, I think I favor the regular sized  marshmallows.   Golly part of the fun is cooking them….and one of the big ones fill you up in one roasting.

But no matter which one you choose….you just gotta have a S’more before the season is over!

I know Billy and I had one….or possibly two…..(but who’s counting)

It certainly brings out the kid in you……

Apple Pie

This time of year there are fruit stands with beautiful baskets of apples all along the county roads.    I knew I was getting close to one the other day, as I drove down the road…. I found myself having a mental conversation.

Oh….I think I will stop and see if they have apples….

No…I don’t need to buy a bunch of apples….

Oh…I bet they do…I bet they are really good this year….

Maybe I will just pull in and look…..

Sooooo……

I purchased some apples from the fruit stand the other day……

My thoughtful mother in law sent some apples home with Billy the same day.   But the really good part of that is…we really like apples and we had different kinds!!!!  So, since I have made….PLENTY….. of Jelly….this summer….I decided to make a pie.

I found out that my sweet Aunt makes an apple pie about once a week for my Uncle.

I thought that was soooooo sweet.

She was gracious enough to share it with me….also stating that it was really easy….

A pie that taste good and is easy….now that is right up my alley!

Here is her recipe…..It’s GOOD…..Really, Really GOOD!

6 Cups Apples-(Granny Smith)

1 Tablespoon lemon juice (optional)

3/4 Cup Sugar

2 Tablespoon Flour

Cinnamon to taste….I used 1 teaspoon

1/2 Teaspoon Nutmeg

1/2 Cup raisins (or dried cranberries or chopped walnuts)

Pastry for double crust—or you can just use top crust.

Here is a beautiful Granny Smith apple my mother in law sent our way…..

This is one of the Golden Delicious apples that I bought…….I decided to try both kinds.

My Aunt lives a LOOOOOONG way away from me….so she couldn’t show me how she does hers.  I am sure she does a MUCH better job and has it down to a fine art if she is making one a week…..

This is how I decided to go about making mine…..with her recipe

One time I saw a picture of a pie cooked in a skillet…since we live in the country….I gave it a whirl.

I do not make pies often….obviously….so I bought my crust.  I knew it would have to taste better than me making my own.  Besides, I didn’t want to waste those good apples on a bad pie!

I melted some butter in the bottom of my skillet, it just looked like it needed some good ole butter in there……then I placed the first crust down….

Mixed all my ingredients and placed them on top of the crust.  Billy chose walnuts to go with his apples….

After I put the top crust on I brushed the top with egg white and made a few slits.  I cooked it for about 1 hour and covered it with foil the last 10 minutes so it wouldn’t over brown.

YUMMMMY….it smelled so good cooking!

Who can wait until it cools….I cut us a piece and topped it with Vanilla Ice cream…

I served Billy and went to get the camera so I could get a picture of him and his beautiful slice of pie….a la mode….

When I returned….and I was only gone for a minute….it was pretty much GONE.

So this is the only picture I got….

It is safe to say…….. he liked the pie!

I said…. well…. Billy!…..I sat the camera down and inhaled mine as well….so still no picture!  Oh, well…..

Thank you Aunt Janet…..it was VERY, VERY, GOOD.  I think I shouldn’t tell Billy that some people get a homemade pie every week……If you know what I mean!!!!!

Oh….and Uncle Pat…..you are a very blessed man!

Road Trip….. Pit Stop

You just have to love road trips.  Sometimes we are on a mission and don’t have time to stop for anything other than a food, gas or bathroom break.  But sometimes we decide something looks like it might be worth the stop.

That is exactly what we did one day when we stopped at a place called Priester’s.

They had the cutest little horse swing made out of tires on the country porch as you enter.   I love atmospheres like that.

 

Once inside there was a really neat gift shop area to browse around in while you stretched your car legs.

They had Dips, Jellies, Dressings, Cookbooks and most anything to do with pecans.  Then we discovered that they had one side of the store dedicated to food products.

Most importantly they had samples galore.  Every kind of coated pecan you can imagine was displayed.  Bowls of samples were everywhere, so you could try the different kinds before buying them, of course we tried all of them!

I noticed that they also had a viewing gallery where you could watch them make all the goodies.  I immediately was drawn to the long hallway full of windows that overlooked the kitchen area.

That kind of thing always interest me.

Here they were making those yummy pecan logs.  I remember stopping at Stuckey’s when we were kids, going to visit my grandparents.  It was about a 14 hour road trip.  We were always sure to stop at a Stuckeys somewhere along the way….pecan logs were one of my Mom’s favorite treats….but pecan pies were her absolute favorite.   We all grew up liking pecans.  They are probably my very favorite kind of nut.

 

I believe they were making divinity here.

 

Then I came up on them making the homemade pecan pies.  I was amazed at how quickly they worked.  When my camera flashed they looked up and smiled and then gave a wave.

They seemed to enjoy what they were doing.  They all had pleasant smiles on their faces even before they saw the camera. I thought that was really neat.  It is so important to do something you like and be around people who are fun and enjoyable to work with.

I think that also speaks highly of the establishment, they obviously provide a good work environment.

Anyway back to the pies….

They measured the dough for the crust, rolled it out, and put it in the pie tins.

 

Pecans were measured, so that every pie would be JUST right.

The pie shells were filled with all the really good stuff and placed on racks.  Once the racks were full….they were ready to go into the oven!

 

And they made a LOT of pies.  It smelled soooooo good….. even through the glass.

Billy came looking for me….he had finally filled up on samples and was ready to get back on the road.  They probably would rather we not stop again.  We did buy some pecans to take with us.

If you ever get the chance to stop, I recommend it.  They also have a web site if you think you just really MUST have something with pecans in it!

I’m sure whatever you pick out……it would be YUMMY!!!!!!

 

Apple Cake….YUM

It is beginning to feel like fall around here.  The mornings have been cool this week.  It is bittersweet for me.  I must admit, I have enjoyed the brisk air… in the mornings…and a little while in the evenings….but I am not a cold weather person.  Once the cool air starts creeping in, I kinda get an …..awwwww man attitude.  I know that the warm days are about to disappear for months.  Which means layering clothes……wearing sweatshirts and jackets.  UGH.

Some of the good parts of fall are the apples, pumpkins, sweet potatoes and all the upcoming holidays.

I had a few apples around and we had eaten all the raw ones we really wanted lately.   Sooooo I remembered a recipe that my Mom had passed down to me.  It came from a lady that was in the home town she grew up in.  This morning I quickly retrieved it from my recipe file box and hurried to make it before work.

I peeled a couple of apples…I have discovered in the last year or two…perhaps you figured this out longggggggg ago…that a vegetable peeler works great for peeling apples.  I have always used them for carrots, potatoes and cucumbers.  Maybe I am just slow…in life.  But this way is much faster and it cuts so close to the skin that it keeps you from wasting the inside of the apple.  I couldn’t remember how many apples I would need, but I ended up only using about three.  It depends of course on how big your apples are.  But you don’t need to buy a bag by any means to try this.  Chop your apples in somewhat small pieces.  Try to keep them all about the same size too.  They will cook uniformly that way.

I say all that as if you don’t know.   But sometimes I look at a recipe and …”I don’t know”…and wish they would be more specific.  So now you know, and you won’t have to wonder.  (Also when Billy and I first married I wanted to make him an apple pie.  I was so proud of myself.  It smelled wonderful in the oven…he was sooooo excited.  I cut it and served it with some vanilla ice cream…we dug in.  It was then that I realized that I never peeled the apples.  WELL….the recipe didn’t tell me too.  I was so busy making sure I did everything perfectly that it just slipped my mind.  I wove the pie crust on the top and punched the edges together and all that.  It was beautiful….but……it wasn’t very good.  It was hard to get past the peelings…other than that it had good flavor.  It is one of those things that you laugh now…but it wasn’t real funny then).

Anyway…

I found this little chopper at a yard sale this summer.  My Mom had one when we were growing up.  It seems they kinda disappeared as people began using food processors and all those BIG gadgets.  I usually cut the pecans by hand…but today…I chopped them in my new/used handy dandy chopper!  Waa Laa they were chopped in seconds…literally.

I have some little loaf pans that I like to use for banana bread and recipes like this.  I actually have never made it in any other pan.  These work great for us, it allows me to be able to wrap them up and give them away easily.  Beside,we don’t need to eat that much by ourselves!

Sometimes…like today…after I sprayed my pans, (or wipe them lightly with oil) I sprinkled a little mixture of cinnamon and sugar in the pans.  Just enough to lightly dust the bottom.  This just gives it a little more ummph.  But you do not have to do this.  The recipe doesn’t say to do it…it is just something I do sometimes.

The mixture will be thick.  When I add everything together, before I put in the pecans…I give it just a swirl or two with the mixer to make sure it is mixed real good. Another thing the recipe doesn’t specify to do.

I ended up with 7 miniature loaf pans.

DONE…..Oh my word….it smells sooooo good!

I popped one out and cut it when it was fresh out of the oven.

You know…I just had to make sure it turned out alright….

The picture doesn’t do it justice.  The slice already has butter….melted all into it.  Billy and I love to eat these loaves like this.  No matter if it is banana bread or whatever it is….when it comes out HOT….we put butter on it and inhale it.

Here is the recipe:

Apple Cake

3 cups sugar

1 1/2 cups oil

3 eggs

2 teaspoons vanilla

Mix that together real good in a large mixing bowl

3 Cups plain flour

1 teaspoon soda

1 teaspoon salt

1 teaspoon cinnamon

Mix in above mixture

then add:

3 cups apples

1 cup pecans

Bake in a 325 degree oven ( Moms recipe called for 1 and 1/2 hours…so this is for a regular cake…maybe like a bundt pan or something)

I cooked my little loaves for about an hour.

HOPE YOU TRY IT THE NEXT TIME YOU HAVE  A COUPLE OF APPLES AROUND….It’s Yummy!

Fruits and Vegetables

We have had so many people share vegetables with us this season.

Billy came home from work one day with a five gallon bucket full of these beautiful tomatoes.  After we enjoyed a few….it was time to put some up.  They will be great when the cold months roll around.

Then, our neighbors shared some okra, fresh picked from their garden, with us.

And some peppers….

So I ventured out and made some Pickled Okra.

Billy loves pickled okra.

But this was my first attempt on making them.  I wasn’t real sure about how they turned out.  I took a jar to my neighbor and consulted with her..she is a whiz at all this.  She assured me they were fine, and gave me some pointers for the next time.  I needed to pack my jars a little tighter.  Hopefully they will taste just fine.  All I could think about was Aunt Bee’s kerosene  pickles on the Andy Griffith show.  I guess time will tell.

Another friend gave us some green beans from her garden…..YUM….my favorite.

I had fun snapping them.  It has been years since I have done that.  It only took a little while and I ended up with 3 quart bags.  YEA!!!!!

Earlier in the season I made Blackberry Jam and Jelly from the blackberries we grew.  I think I made 3 batches.

I passed a fruit stand the other day…and well….I had to get some peaches.

These were some of the biggest and most beautiful peaches I have ever seen.

I made Peach Jam last weekend.  I ended up having enough peaches to make two batches.  That gave me 19 half pints!!!! Woo Hoo

This week my brother in law gave me a bag of apples that he picked.

So I washed them and had them drying on the counter when Billy came in.   He said….what are you going to make?

I could see his eyes twinkle.  I said….Apple Jelly!  The twinkle kinda went out of his eyes.  OH….more Jelly huh?!?

I hadn’t really thought about it…but yeah…more jelly.  I suppose I should have made him an apple pie or apple turnovers or something like that,  I just had Jelly on the brain.  After I thought about it…. I suppose I could have made him a peach cobbler with some of those peaches, but ….well….Poor Billy.

Today….I made the apple jelly.

I didn’t look at how much the recipe would make until I was well into the process.  It only made four half pint jars.  I’m not too sure that I will go to all that trouble to make four jars again.

Maybe I should have made a pie after all.  Although, I do appreciate the free apples.

I bet when a few months go by, Billy and I both will be glad that we have jelly….

Peanut Butter Apple

I love this idea.  I did not come up with it on my own.  I believe I was in 7th grade when a girl named Susie brought one of these in her lunch.  I was totally amazed.

It is easy to do….and great to pack up for on the go.

Pick the apple variety you like best.

 

Get a good sharp knife…..

 

Cut around the core …I usually make a square…sometimes if it is stubborn I turn it over and cut from the bottom side as well.

 

Push on the core and…….Wah…Lah!!!

 

Fill the center of the apple with ….Peanut Butter.

 

Now isn’t that neat.

You can pack it up easily…to take in the car for later…a picnic…or kids lunches.

 

I find that I eat apples a little more this way.  I like getting that little bit of peanut butter with  a bite of apple.

Anyway, that is something I thought you might like to try if you haven’t already.
